&lt;p&gt;&lt;strong&gt;Peking duck in Beijing. &lt;/strong&gt;&lt;span&gt;Many great dishes are named for their creators, but oddly, no one is honored for Peking duck, perhaps the greatest culinary invention of all. Imagine what went into that dish’s development: knowing that to blow the slaughtered bird up with air and hang it for 24 hours will free the skin from the flesh as fat drips slowly out. Then to devise the savory glaze of rice vinegar, honey, plummy hoisin sauce, ginger, sesame oil and a pinch of hot chili peppers. The bird is then set vertically on a rack in the oven and brushed with sauce intermittently as the roasting proceeds. And to think of serving, most authentically, first the skin wrapped in hot thin crepes seasoned with hoisin with brushes of scallions and cucumber slivers to be followed by the meat and finally a heady soup of cabbage simmered with the bones of duck carcass. (Less traditionally and less ethereally, skin and meat are sometimes wrapped up together.) Having had Peking duck often, I was newly beguiled several years ago at the Da Dong Beijing Roast Duck Restaurant in Beijing, where women at the table were served the first course of crisped skin with small dishes of coarse, diamond-bright crystal sugar to be sprinkled on. I was told that a long-ago Chinese empress considered spices too strong for delicate feminine palates and thought sugar more appropriate. &lt;p&gt;&lt;br/&gt;&lt;strong&gt;9: Name a LEAST favorite of each: book, movie, tv show. &lt;/strong&gt;&lt;br/&gt;50 Shades of Grey (I don&amp;#8217;t plan on reading it, the concept makes me pukey), I don&amp;#8217;t like spoofs in general, Secret Graden (kdrama that was a waste of my time since I was not a fan of the cast, and the storyline just went downhill).&lt;br/&gt;&lt;br/&gt;&lt;strong&gt;10: If you were sat on a plane beside your favorite celebrity, what would you do?&lt;/strong&gt;&lt;br/&gt;Make conversation. It depends though, I&amp;#8217;ve been sat next to people who don&amp;#8217;t want to talk, some who are way too chatty etc. so wouldn&amp;#8217;t want to come off that way. But I&amp;#8217;d love to hear about their experiences, since they travel so much and see so many different things.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;11: What is the strangest thing you have in your room? (You are not allowed to explain why you own it.)&lt;/strong&gt;&lt;br/&gt;Umm.. let&amp;#8217;s see now.. AH. A portable air conditioner.&lt;/p&gt;
&lt;p&gt;&lt;br/&gt;&lt;strong&gt;12: What is a weird habit you have, or people have told you have. (Weird, not bad. No nail biting or any of that nonsense.) &lt;/strong&gt;&lt;br/&gt;I tend to sing (and I never notice when I&amp;#8217;m doing this) when I get very tired.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;13: What would you consider to be the biggest insult to yourself?&lt;/strong&gt; &lt;br/&gt;Being called a hypocrite. I am never that, and I despise that.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;14: What are five things you absolutely have to have in your dream house?&lt;/strong&gt; &lt;br/&gt;A swimming pool, a gigantic library, a walk in closet and a vegetable garden.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;15: If you could be reincarnated as any animal, which would you choose and why? &lt;/strong&gt;&lt;br/&gt;A horse maybe. A wild horse, because I quite like running mindlessly. HAH.&lt;br/&gt;&lt;br/&gt;&lt;strong&gt;16: Which band (current or past) would you want to go on tour* with? (*Travel with, not preform with.)&lt;/strong&gt; &lt;br/&gt;Coldplay? They have some pretty cool concerts. And they seem like nice people to travel with, no drama or anything like that.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;17: Name a favorite of each: band, album, song.&lt;/strong&gt;&lt;br/&gt;Red Hot Chilli Peppers, Dean Martin&amp;#8217;s Greatest Hits, Idon&amp;#8217;t have a favorite song, but I&amp;#8217;m pretty in love with I&amp;#8217;m Gonna Be by the Proclaimers, right now.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;18: Why is your favorite band your favorite?&lt;/strong&gt;&lt;br/&gt;I&amp;#8217;ve known them since I was a wee kid, following my big cousin brother around, and trying to like everything he liked. Their music has gotten better for me over the years, and it always sounds fresh. Sort of like when you read poetry, it will always mean something different to you, at different ages in your life.&lt;/p&gt;
&lt;p&gt;&lt;strong&gt;19: How many concerts have you attended? Which was your favorite? Least favorite? If none, who do you want to see live the most?&lt;/strong&gt;&lt;br/&gt;Haven&amp;#8217;t ever been to a big concert, but I really really really really really want to see MIKA live. It&amp;#8217;s on my bucket list so this shit is happening. &lt;/p&gt;

&lt;p&gt;There were three officially scheduled showings: 1:00 PM, 3:30 PM, and 5:00 PM. But then it was suggested by the lovely folks at The Way Station that they could maybe do a 6:30 showing as well (5:00 and 6:30/6:45 are more their usual screening times). Sue Vertue then asked if there was in fact going to be a 6:30 showing. &lt;/p&gt;
&lt;p&gt;So I planned my day.&lt;/p&gt;

&lt;p&gt;&lt;span&gt;While resting comfortably in my air-conditioned bedroom one hot summer night, I received a phone call from my mom. She asked me softly, “Lyle, can you come down and clean up the restaurant?”&lt;/span&gt;&lt;/p&gt;
&lt;p&gt;Slightly annoyed, I put on my sandals and proceeded downstairs. Mixing the hot water with cleaning detergents, I was ready to clean up the restaurant floor. Usually the process was painstakingly slow: I had to first empty a bucket full of dirty water, only to fill it up again with boiling water. But that night I made quick work and finished in five minutes. My mom, unsatisfied, snatched the mop from me and began to demonstrate the “proper way” to clean the floor. She demanded a redo. I complied, but she showed no signs of approval. As much as I wanted to erupt that night, I had good reasons to stay calm.&lt;/p&gt;
&lt;p&gt;Growing up in rural China, my mom concerned herself not with what she would wear to school every day, but rather how she could provide for her family. While many of her classmates immediately joined the work force upon completing high school, my mom had other aspirations. She wanted to be a doctor. But when her college rejections arrived, my mother, despite being one of the strongest individuals I know, broke down. My grandparents urged her to pursue another year of education. She refused. Instead, she took up a modestly paying job as a teacher in order to lessen the financial burden on the family. Today, more than twenty years have passed, yet the walls of my parents’ bedroom still do not bear a framed college degree with the name “Tang Xiao Geng” on it.&lt;/p&gt;
&lt;p&gt;In contrast, when I visit my friends, I see the names of elite institutions adorning the living room walls. I am conscious that these framed diplomas are testaments to the hard work and accomplishments of my friends’ parents and siblings. Nevertheless, the sight of them was an irritating reminder of the disparity between our households. I was not the upper middle class kid on Park Avenue. Truth be told, I am just some kid from Brooklyn.&lt;/p&gt;
&lt;p&gt;Instead of diplomas and accolades, my parents’ room emits a smell from the restaurant uniforms they wear seven days a week, all year round. It’s funny how I never see my mom in makeup, expensive jeans, lavish dresses, or even just casual, everyday clothing that I often see other moms wearing. Yet, one must possess something extraordinary to be able to stand in front of a cash register for 19 years and do so with pride and determination.&lt;/p&gt;
&lt;p&gt;On certain nights, I would come home sweaty, dressed in a gold button blazer and colored pants, unmistakable evidence of socializing. In contrast, my mom appears physically and emotionally worn-out from work. But, she still asks me about my day. Consumed by guilt, I find it hard to answer her.&lt;/p&gt;
&lt;p&gt;Moments such as those challenge my criteria of what constitutes true success. My mother, despite never going to college, still managed to make a difference in my life. Tomorrow, she will put on her uniform with just as much dignity as a businesswoman would her power suit. What is her secret? She wholeheartedly believes that her son’s future is worth the investment. The outcome of my education will be vindication of that belief.&lt;/p&gt;
&lt;p&gt;In hindsight, I’m astounded at the ease with which I can compose all my views of this amazing woman on a piece of paper, but lack the nerve to express my gratitude in conversations. Perhaps, actions will indeed speak louder than words. When I graduate on June 1st, I know she will buy a dress to honor the special occasion. When I toil through my college thesis, I know she will still be mopping the restaurant floor at 11:00 PM. When I finally hang up my diploma in my bedroom, I know she will be smiling.&lt;/p&gt;

It was written in the 1960s by an  &lt;em&gt;Anonymous &lt;/em&gt;15 year old boy, 2 years before he committed suicide. &lt;strong&gt;Steven Chbosky &lt;/strong&gt;&lt;em&gt;(The perks of being a wallflower) &lt;/em&gt;used this poem in the Perks Of Being A Wallflower, but had differences. This poem is also in English curriculum for a lot of high schools.&lt;em&gt; It is a very powerful poem, and although it is very blunt, there is so much more meaning and depth behind each line.&lt;/em&gt; &lt;/p&gt;
